INGREDIENTS

10 lb Tomatoes (pref. overripe)
1 1/4 c Wine vinegar
2 tb Salt
1 ts Cinnamon
1 tb Allspice
1 tb Mustard powder
1 ts Cayenne pepper
1 tb Baking powder
1/2 c Dark brown sugar

INSTRUCTIONS

PLACE TOMATOES AND VINEGAR in a large saucepan over medium heat. Cover and
cook until soft, about 30 minutes. Strain the tomatoes or place through a
food mill. Discard seeds and skins and replace tomato pulp in a clean
saucepan. Add all other ingredients and let simmer over medium heat about 2
hours, or until reduced to 6 cups. Stir occasionally. The mixture should be
thick. Makes 6 Cups
