Hot Chocolate Souffle

Eggs, Dairy Dessert 6 Servings

INGREDIENTS

3 Squares unsweetened chocolate
1 c Sugar; divided
4 Eggs; separated
1/4 ts Salt
2 ts Vanilla
1/2 c Broken pecans
Whipping cream; whipped

INSTRUCTIONS

Melt chocolate in top of double boiler or in microwave. Stir in 1/3 cup
sugar. Beat egg whites and salt. Continue beating and add 1/3 cup sugar.
Combine yolks and whites. Fold in chocolate. Add vanilla and nuts. Turn
into a well-buttered 1 quart casserole. Set casserole in pan of hot water.
Bake for 30 to 40 minutes at 375°. Serve with whipped cream. Yield: 6
servings.
