Lemon Shortbread Squares

Eggs 1 Servings

INGREDIENTS

1 c Flour
1/4 c Sugar
1/2 c Butter
1 c Sugar
2 Eggs, lightly beaten
2 ts Lemon rind
3 tb Lemon juice
2 tb Flour
1/2 ts Baking powder
1/4 ts Salt

INSTRUCTIONS

BASE
TOPPING
Base: Blend ingredients to make fine crumbs. Press into 8 inch square pan.
Bake 325 F. for 20 minutes until lightly brown.
Topping: Combine ingredients and spread over base. Bake in 325 F. oven for
25 minutes or until nearly set. Remove from oven and let cool in pan. Cut
into small squares, makes about 20.
