Paul and James both say that we should rejoice in our trials because of their beneficial results. It is not the adversity considered in itself that is to be the ground of our joy. Rather, it is the expectation of the results, the development of our character that should cause us to rejoice in adversity. God does not ask us to rejoice because we have lost our job, or a loved one has been stricken with cancer, or a child has been born with an incurable birth defect. But He does tell us to rejoice because we believe He is in control of those circumstances and is at work through them for our ultimate good.

Lori’s Sour Cream Pound Cake

INGREDIENTS

1 c Butter or margarine; softene
6 lg Eggs
2 2/3 c Sugar
3 c All-purpose flour
1/4 ts Baking soda
1/2 ts Salt
1 c Sour cream; cultured
1/2 ts Lemon extract
1/2 ts Orange extract
1/2 ts Vanilla extract
2 minutes more.

INSTRUCTIONS

Bring butter and eggs to room temperature.  Grease and flour the bottom and
sides of a 10-inch bundt or tube pan; set aside.
In large mixing bowl, beat butter with electric mixer until creamy.
Gradually add the sugar, beating at medium speed until light and fluffy.
Add eggs, one at a time, beating about 1 minute after each; scrape bowl
frequently, guiding mixture toward beaters. Beat
Sift together flour, soda and salt. Add to creamed mixture alternately
with sour cream, beginning and ending with flour mixture. Beat well after
each addition. Add lemon, orange and vanilla extracts; beat just until
thoroughly blended.
Pour batter into prepared 10-inch bundt or tube pan. Bake in preheated
350 degree oven for 1-1/2 hours, or until wooden pick inserted in center
comes out clean and dry. Cool cake in pan on wire rack for 15 minutes;
remove from pan. Cool completely. Sprinkle with confectioners' sugar, if
desired.
