Money is a self-defeating pursuit. In my efforts to find contentment in money, I actually become more discontent if I love money. The more I believe money will satisfy my needs, the more I will depend on money, only to realize that I never have enough. Lucious Beet and Orange Salad

Vegetables 6 Servings

INGREDIENTS

3 tb Vegetable oil
3 tb Cider vinegar
1 ts Sugar
1/4 ts Ground cumin
1 cn (16 oz) sliced beets, cut into halves or quarters, drained or fresh cubed.
1/4 c Chopped red onion
2 lg Oranges, peeled and sectioned
Lettuce leaves

INSTRUCTIONS

from: Reader's Digest May 1996
In medium bowl combine oil, vinegar, suger and cumin. Add beats and onion,
toss gently to coat. Cover, chill to blend flavors. With slotted spoon,
remove beets and onion from marinade. Arrange with oranges on lettuce-lined
platter. Drizzle with 3 Tablespoons marinade. note: I like to use drained
mandarin oranges and use some of the juice to sprinkle over all.
