INGREDIENTS

2 tb Ground cumin
1/2 ts Cinnamon
5 Cloves garlic; minced
1/4 c Plus 2 Tbs. orange juice
2 ts Olive oil
1 1/2 lb Boneless skinless chicken breast halves

INSTRUCTIONS

Prep: 5 min, Marinate: 35 min, Cook: 15 min. Preheat oven to 400°F. Combine
all ingredients, except chicken breasts, in a non-reactive bowl. Press
spice mixture into chicken breasts. Marinate chicken at least 35 minutes.
Arrange chicken breasts on a baking sheet on top rack of oven. Roast 8
minutes. Turn on broiler. Place chicken under broiler and broil 3 minutes
or until chicken is opaque throughout.
Per serving: calories 256, fat 7.5g, 27% calories from fat, cholesterol
108mg, protein 40.4g, carbohydrates 5.2g, fiber 0.5g, sodium 100mg.
