'Saved Alone' was the message that Horatio Spafford received from his wife after the ship sank that was taking her and their four children to England in November, 1873. After reuniting with his grieving wife at sea, the boat came near the area where his children had drowned. It is speculated that at that time he wrote the words (contained in his famous hymn) that vividly described his own grief and faith: “When sorrows like sea billows roll – Whatever my lot Thou hast taught me to say, it is well, it is well with my soul” (Phyllis LaPeau).

INGREDIENTS

2 tb Olive oil
2/3 c Yellow onion; sliced
3 c Garlic; minced
1 tb Sesame seed; toasted
1/4 ts Ground cinnamon
1/4 ts Ground cloves
1/4 ts Coriander seed; toasted and crushed
3 tb Pure Ancho chili powder; ground
2 ts Fresh cilantro; chopped
3 c Chicken stock
2 tb Smooth peanut butter
2 1/2 tb Tomato paste
4 tb Golden raisins
1 oz Unsweetened chocolate; chopped
Salt and freshly ground black pepper; to taste

INSTRUCTIONS

In a deep sauce pan add oil, onion, garlic, sesame, cinnamon, cloves,
coriander, ground chile and cilantro and saute over moderate heat until
vegetables are very soft. Add stock and simmer partially covered for 10
minutes stirring occasionally.
In a food processor, blender or with an immersion blender, add peanut
butter, tomato paste, raisins, and chocolate and process until smooth.
Return sauce to pan and simmer covered. Thin with additional stock if
necessary. Yield: approximately 2 cup
