INSTRUCTIONS
Peel and cut onions into 1/2-inch slices. Separate into rings. Beat egg
yolks; add buttermilk, oil and sifted dry ingredients. Beat egg whites
until stiff; fold into buttermilk mixture. Dip onion rings into batter. In
deep, hot oil in a large skillet, fry rings a few at a time until golden
brown. Drain on paper towels.
