My Yummy Bran Muffins

Eggs, Dairy 1 Servings

INGREDIENTS

3 c All-Bran cereal
1/2 c Veg. oil
1 c Boiling water
2 1/2 c Flour (don't sift, but spoon gently)
1 ts Salt
1 1/2 c Sugar (gran. white)
2 1/2 ts Baking soda**
2 Eggs, beaten (room temp)
2 c Buttermilk (not low-fat)
1 c Raisins (golden for best flavor)

INSTRUCTIONS

Combine 1st 3 ingred. in bowl, set aside.
Combine dry ingreds in bowl. Add eggs & buttermilk, stirring until ingreds
are moistened. Add Bran misture and raisins, mix well. Fill greased tins
2/3 full. Bake 400 degrees 15-20 minutes
NOTE: these muffins freeze well! Everytime I make them, they disappear
before I ever get a chance to freeze any. So I have learned to double the
recipe. These are definitely Tried and Loved!! It took me many tries at
adjusting the recipe, before I got them just right. I hope you enjoy them.
