INGREDIENTS

48 sm Mushrooms
1 lb Owens hot breakfast sausage

INSTRUCTIONS

In 1975 a wonderful appetizer cookbook was published. Called In The
Beginning, it sold widely thanks to recipes such as this one. I love
recipes with few ingredients. This one is perfect.
Wash and dry the mushrooms. Remove the mushroom stems. Fill the cavity in
each mushroom with pork sausage, mounding it. Broil the mushrooms on a
shelf close to the broiler unit, for 10 minutes.
Serve immediately to an admiring throng.
**The mushroom stems could be used to make mushroom omelets for the next
morning or used to make a mushroom quiche or strata.
