INGREDIENTS

2 3/4 c Water
1 c Uncooked rolled oats
1/2 c Egg substitute, thawed
1/4 c Sugar
1 1/3 c Skim milk
1/2 ts Vanilla extract
1/8 ts Salt
1/3 c Chopped dried fruit (your choice)
1/2 ts Cinnamon
Vegetable cooking spray

INSTRUCTIONS

Boil water in covered saucepan. Stir in oats. Return to a boil, reduce heat
and continue to boil. Cook, uncovered, for about one minute, stirring
occasionally. Remove from heat. Cover & set aside.
In a large bowl, mix egg substitute, sugar, milk, vanilla & salt. Add
cooked oatmeal, dried fruit and cinnamon to egg mixture & mix well. Pour
into 8-inch square pan coated with vegetable cooking spray. Place in larger
pan of hot water. Bake in 350 degree oven for one hour, or until set.
Yield:4 Servings
Per Serving: 156 Cal; 2 g Fat; 7 g Protein; 30 g Carbohydrate; 90 mg
Sodium; 0 mg Cholesterol. Dietary Exchanges: 1/2 Milk; 1/2 Fruit; 1
Bread/Starch.
