Oatmeal Shortbread

INGREDIENTS

1/2 c Walnuts Finely Chopped; (Optional)
2 c Rolled Oats
1 1/2 c All-Purpose Flour
1 c Butter Or Margarine*; Unsalted
1 ts Baking Soda
1/2 ts Salt
1 Egg
3/4 c Brown Sugar
1/2 c White Sugar
1/2 ts Vanilla Extract
1/2 ts Almond Extract

INSTRUCTIONS

A deliciously different variation on shortbread.
1 Preheat oven to 350 degrees F. Grease cookie sheets.
2 In a large mixing bowl, cream together the butter and white and brown
sugars.
3 Add egg, almond and vanilla extracts and stir well. In a separate bowl,
mix together the flour, salt and baking soda.
4. Slowly add to butter mixture and mix until well blended.
5. Stir in chopped nuts and oats. Mix thoroughly. Roll about 1 tablespoon
of dough into a ball.
6. Flatten dough on cookie sheet with a fork and bake for 8 to 12 minutes.
Makes 60 cookies
NOTES :  If you use salted butter/margarine omit the salt.
