One Pan Mexican Chocolate Cake

INGREDIENTS

1 1/4 c Flour
1 c Sugar
1/4 c Corn starch
3 tb Cocoa
1 ts Baking soda
1 ts Cinnamon
1/2 ts Salt
1/3 c Oil
1 tb White vinegar
1/2 ts Vanilla
1 c Water
2 tb Cocoa
1 tb Oil
1 tb White corn syrup
1/2 ts Cinnamon
1 c Confectioner's sugar

INSTRUCTIONS

CHOCOLATE GLAZE
Here are two great TNT one-pan cake recipes (with frostings) from years
ago, origin unknown, although I think it may have been McCalls or Family
Circle Magazine in the early 1980's.
In 8 or 9 inch pan mix together flour,sugar, corn starch, baking soda,
cocoa, cinnamon and salt with fork. Add oil, vinegar, vanilla and water.
Mix well. Bake at 350° for 30 to 35 minutes. Cool and frost.
Chocolate Glaze: Combine cocoa, oil, syrup and cinnamon in small sauce pan.
Stir over low heat until smooth. Gradually stir in sugar until smooth and
shiny.
NOTE: Both of these are also good topped with whipped cream or sprinkled
with powdered sugar.
