To be victorious in the Christian life, we must understand the emotional paradox between our trials and our joy. They are both real and they both exist in tension with each other. We must acknowledge our pain. We are permitted to grieve. But through it all, we are found rejoicing in God, knowing that He is in control, using the trial for our good. As Paul said in 2 Corinthians 6:10, “Sorrowful, yet always rejoicing.”

Open Face Tuna Sandwich

INGREDIENTS

Tuna Salad
Sourdough Bread
2 Cannned Ortega chilies
2 Thin slices tomato
1 sl Cheddar cheese — or other
Cheese

INSTRUCTIONS

1. Make your tuna salad how you like it. I just flake the tuna, add some
mined onions, celery chopped fine and mix with a little fresh dill and Best
Foods mayonaise. 2. Slice some good sour dough french bread, toast in the
toaster, butter one side and glob some tuna salad over the top. 3. Lay 2
canned ortega chilis over the top of this. I occasionaly use fresh chilis.
4.  Put 2 thin slices of tomatoes over this. 5. Put 1 slice of your
favorite cheese over the tomatoes. (I use cheddar) 6. Put under the
broiler, until the cheese is bubbly and sprinkle with a bottled Cajun
seasoning.  Then enjoy!
