Orange Parsnips

INGREDIENTS

1 lb Parsnips; peeled and sliced 1/4-inch thick
1/2 c Orange juice
1 ts Sugar
1/4 ts Salt
1 ds Pepper
Grated peel of 1 orange

INSTRUCTIONS

In saucepan combine parsnips, orange juice sugar, salt and pepper; bring to
a boil. Cover and cook for 5-10 minutes, or until tender. Remove from heat
and sprinkle with orange peel. Serves 4-6. Microwave method: Combine all
ingredients except orange peel in 1 1/2-quart glass casserole. Cover with
waxed paper and cook on HIGH for 14 minutes, stirring 3 times. Sprinkle
