What a haven of rest to enter, after having passed through the storms and tempests of this world, in which pride and selfishness and envy and malice and scorn and contempt and contention and vice are as waves of a restless ocean, always rolling, and often dashed about in violence and fury! What a Canaan of rest to come to, after going through this waste and howling wilderness, full of snares and pitfalls and poisonous serpents, where no rest could be found.

Ozark Pudding

INGREDIENTS

2 Eggs
1 c Sugar
1 ts Vanilla
1/3 c All-purpose flour
1 tb Baking powder
1/8 ts Salt
2 c Apples, peeled and chopped
1/2 c Walnuts, chopped
Unsweetened whipped cream
Poached apple slices

INSTRUCTIONS

In large mixer bowl, beat together eggs, sugar, and vanilla until light and
fluffy. Stir together flour, baking powder, and salt. Blend into creamed
mixture. Fold in apple and walnuts. Turn into greased and floured 9x9x2"
baking pan. Bake in 325F oven 30-35 min. Spoon into dessert dishes. Serve
warm with whipped cream and apple slices.
Serves 6-8.
