Pancakes for One

INGREDIENTS

1/2 c All-purpose flour
2 ts Wheat germ
1/4 ts Baking soda
1/4 ts Baking powder
1/4 ts Salt
1 Egg
1/2 c Buttermilk
1 1/2 ts Vegetable oil
Butter and maple syrup

INSTRUCTIONS

In a bowl, combine flour, wheat germ, baking soda, baking powder and salt.
In another bowl, beat egg; add buttermilk and oil. Stir into dry
ingredients just until blended. Pour batter by 1/3 cupfuls onto a lightly
greased hot griddle; turn when bubbles form on top of pancakes. Cook until
the second side is golden brown. Serve with butter and syrup. Yield: 1
serving or 3 pancakes.
