Pasta with Grilled Vegetables

INGREDIENTS

8 oz Spaghetti — uncooked
3 tb Olive oil — divided
1 lg Garlic clove — minced
2 sm Zucchini — cut in 1/4"
Slices
1 Red bell pepper — seed &
Cut in 1/2"
1/4 lb Mushroom — sliced
3 tb Fresh basil — chopped
1 tb Lemon juice
2 ts Lemon peel — grated
1/2 tb Salt
1/4 ts Black pepper

INSTRUCTIONS

Heat grill or broiler.  Meanwhile, cook spaghetti in boiling salted water
according to package directions until just tender.  In a cup mix 1 Tbs oil
and the garlic.  Arrange vegetables on a grill grid or broiler rack. Brush
vegetables with oil mixture and cook until tender; turning once, 6 to 8
minutes.  Place in a large bowl.  Add remaining 2 Tbs oil, the chopped
basil, lemon juice, lemon peel, salt and pepper.  Drain spaghetti and add
to vegetables in bowl.  Toss to combine.  Garnish with basil and serve with
cheese.
