Paul’s Peerless Gooseberry Pie

INGREDIENTS

3 c Fresh canned or frozen gooseberries
1/2 c Flour
1 1/2 c Granulated sugar
1/2 Stick butter or margarine
2 crust for 9 inch deep dish pie

INSTRUCTIONS

Put gooseberries in sauce pan and slightly cook. Thoroughly mix flour and
sugar and add to the slightly cooled berries. Pour contents of sauce pan in
pie crust and sport with dabs of butter. Add top crust, punch a few holes
for vent and bake in 375 degree oven for about 45 minutes. I find it
helpful to rim the crust with strips of foil to keep the rim from
overbaking. Also, top crust can be omitted and a Dutch apple topping
substituted. Mighty good.
