Our love for them must be strong enough, however, to tell them with both passion and compassion, that their hopes are in vain, that their gods are mute and dumb, and that there is only one name under heaven by which a man must be saved. Our love for them does not present the Christian Gospel as an option. It does not lead us to argue that it’s a good option that has worked well for us. Our love instead commands all men everywhere to repent and believe the Gospel, lest they perish. Our love calls on all our enemies to kiss the Son, lest He be angry and they perish along the way (Ps. 2:12).

Penne with Artichoke Hearts

INGREDIENTS

1 pk Frozen artichoke hearts (9
Oz)
10 oz Penne or rigatoni
2 ts Olive oil
1 sm Onion — thinly sliced
1 Garlic clove — finely
Chopped
1 1/2 ts Fresh oregano — chopped OR
1/2 ts Dried oregano
Salt and pepper to taste
1/4 c Dry white wine
2 tb Fresh lemon juice
1/2 c Skim-milk ricotta cheese
1 tb Grated lemon zest

INSTRUCTIONS

Blanch artichokes in lightly salted water for 1 minute; drain well. When
cool enough to handle, slice about two-thirs of teh artichokes into small
wedges and set aside; finely chop the remaining artichokes into a paste and
set aside.
In a large pot of boiling salted water cook penne or rigatoni until al
dente, 10 to 15 minutes.
While the pasta is cooking, heat oil in  alarge nonstick skillet over
medium heat. Add onions and garlic; cook, stirring, for 1 minute. Add
oregano, salt and a generous grinding of pepper. Stir in 1/4 cup water and
cook until the water has evaporated and teh onions are limp, about 2
minutes. Reduce heat to low, stir in wine, lemon juice and the reserved
artichoke wedges and chopped artichokes. Simemr, stirring, until heated
through, about 1 minute. If the mixture becomes dry, add 1 or 2 tbs of
water. Add ricotta and stir until creamy.
When the pasta is ready, drain it and add to the skillet with the simmering
sauce.; toss well. Remove from heat and stir in lemon zest. Taste and
adjust seasonings with salt and pepper. Serve immediately.
