Pine Nut and Orange Wild Rice

INGREDIENTS

1 c Golden Raisins
1/2 c Water
1 c Long-Grain And Wild Rice —
Uncooked
1/2 c Pine Nuts — toasted
2 tb Fresh Parsley — chopped
2 tb To 4 Tb Olive Oil
2 tb Grated Orange Rind
2 tb Orange Juice
1/4 ts Ground Pepper

INSTRUCTIONS

Combine raisins and water in a small saucepan.  Bring to a boil; cover;
reduce heat, and simmer 3 minutes. Remove from heat and let cool. Drain and
set aside. Cook rice (with 2 cups water for 20 minutes). Combine rice and
remaining ingredients.
