2 c Quinoa, cooked — (basic
Recipe)
3 c Soy or rice milk — or cows
Milk
1/3 c Honey — Or
1/2 c Brown sugar (if using real
Mex cane sugar — use less)
Egg subst. for 3 eggs — or
3 Eggs
1/8 ts Salt
1 tb Soy butter or oil — (or
Butter)
1 ts Vanilla
1/2 c Raisins
1/2 c Shredded coconut
1/2 c Almonds or walnuts —
Ground
1/2 ts Cinnamon
1/2 ts Lemon or orange rind —
Grated
1 ts Lemon juice

INSTRUCTIONS

Combine all ingredients. Pour nto greased baking dish or greased individual
custard cups. Bake n 350 degree oven until set, about 45 minutes.  Serve
hot or cold, topped with vegan yogurt, soy or rice cream or apple juice.
