(10 oz) Ro-Tel tomatoes with green chilis |

Onion, chopped fine |

Chili powder |

Chili sauce (I used ketchup) |
INSTRUCTIONS
1. Preheat oven to 375 degrees. Combine all ingredients except chili sauce
or ketchup. Blend well.
2. Press into an ungreased loaf pan. Bake, covered, for 1 hour. Drain
drippings from pan.
3. Spoon chili sauce or ketchup over meat loaf. Bake uncovered an
additional 15 minutes. Let stand about 10 minutes before serving.
Personal notes: This meat loaf is very moist. If you want a firmer loaf,
use another slice of bread in the preparation. This is great with mashed
potatoes, and the leftovers (if any) reheat well in the microwave. Kenny
loved the leftovers on a "meat loaf sandwich" the next day.
