Nothing is more discouraging than evangelism. The mere mention of the word strikes fear in most people. If it is my goal when speaking in a church to make all my listeners uncomfortable and convicted, all I have to do is say, “evangelize!,” and the guilt quotient rises as fast as the heads drop. Beads of sweat appear on the pastor’s brow. It is the great undone command, and none of us like to be reminded of it.

Roast Beef, Saga Blue, and Watercress with Horseradish Mayon

INGREDIENTS

4 5-inch lengths of French bread; split horizontally leaving the halves attached
1/3 lb Saga blue cheese; softened and the rind discarded
2 c Watercress sprigs
1 lb Thinly sliced rare roast beef
1/4 c Mayonnaise
1 tb Drained bottled horseradish; or to taste

INSTRUCTIONS

Can be prepared in 45 minutes or less.
Open the bread lengths, spread the cut sides with the blue cheese, and top
the cheese with the watercress and the roast beef. In a small bowl combine
well the mayonnaise and the horseradish and drizzle the horseradish
mayonnaise over the roast beef. Season the sandwich with salt and pepper
and close them, pressing them firmly.
Makes 4 sandwiches.
