INSTRUCTIONS
Flake salmon. Remove bones. Combine salmon, potatoes, beans, onions, and
melted butter. Season to taste. Mix until well blended. Fold in stiffly
beaten egg whites. Pour into well-oiled baking dish. Bake in moderate oven
(400 F) until puffy and brown. Serve at once with sour pickles and tartare
or tomato sauce.
