2 c Water
8 ts Vegetarian beef flavored broth powder
2 ts Creole mustard
2 tb Low sodium soy sauce
Water for saute'
1 c Onions; chopped medium
4 Cloves (large) garlic; minced (I use 2 tsp Trader Joe's minced garlic)
12 Tortillas

I am sending this recipe to the list after someone (sorry, can't remember
who) asked for TVP recipes. This is one that I've adapted from "My Favorite
TVP Recipes" by Roger Kilburn. [This is the cookbook put out with the TVP
sampler pack from Harvest Direct.] I've modified it for what I usually have
on hand and my taste. My SO *loves* this recipe and he is a
died-in-the-wool meat eater.
In a medium sauce pan, bring water to a boil. Add veggie broth, Creole
mustard, and soy sauce. Add TVP, reduce to a simmer, and cook for 15
minutes.
In a large skillet, saute' onions and garlic in some water (I never
measure, just enough not to burn either ingredient) over medium high heat
until clear, about 3 minutes. Add TVP and cook for 5-10 minutes. Serve with
tortillas. I personally like Judith's LF Kosher Flour Tortillas-Salsa
style. You can add other things, like red or yellow peppers, carrots, etc.
It is really flavorful and good for packing for a lunch.
I haven't done an exact fat gram analysis on this, but I believe this is
within guidelines. If not, I am sure one of you will tell me. :^)
