INGREDIENTS

1 ts Dijon mustard
1/4 c Sugar
1 tb Sherry vinegar; best quality
2 tb Olive oil; best quality
Salt and freshly ground black pepper

INSTRUCTIONS

Whisk together the mustard, sugar and vinegar. Whisking constantly dribble
in the olive oil. Add salt and pepper to taste. Makes 1/4 cup. Used in
other recipes in Diane Mott Davidson Books
