Dairy French 1 Servings

INGREDIENTS

6 oz (about 1 C.) diced cooked shrimp
1 c Shredded lo-fat mozzarella cheese
3/4 c Chopped plum tomatoes; (about 2 med.)
3/4 c Chopped fresh spinach
1/4 c Chopped scallions
1 ts Crushed fresh garlic
1 ts Dried oregano
1 Long; thin loaf French bread,about 24x2x1 in.

INSTRUCTIONS

Combine shrimp, cheese, tomatoes, spinach, scallions, garlic and oregano in
a medium bowl, stir to mix well and set aside. Slice the bread into 48 (1/2
in.) slices. Arrange slices on a baking sheet and bake at 300 for 12-15
min. or til crisp and dry. Spread each slice with 1 T. of the shrimp
mixture. Increase the oven temp. to 400 and return the appetizers to the
oven for 5 min., or just til the cheese is melted. Arrange on a serving
platter and serve hot.
