INGREDIENTS

1 Lemons (up to 2)
3 tb Honey/palm sugar
1 lg (3-4in main stem) piece ginger
Green spices (cardamom; cloves, kaffir lime leaves (fresh), ?cinnamon stick)
1 ts Green/jasmine tea (up to 2)
As much chile as you can handle, flakes or fresh, not powdered
Mug of hot water

INSTRUCTIONS

A much more effective version of Granny's honey and lemon...
Into a saucepan, put water, spices, chile, green tea, and put on to boil.
Now, extract juice from ginger (grate, squeeze, soak, squeeze), and lemon
and pour into saucepan ( liquid will change colour sometimes all the way to
bright pink!), along with honey and lemon zest (so much easier than trying
to squeeze naked lemons).
Do not allow to boil further, as this changes the flavour considerably.
Strain liquid into mug, stir and enjoy.
