Sweet potatoes, peeled and sliced |

Brown sugar, firmly packed |

INSTRUCTIONS
Melt butter and bacon drippings in skillet. Add water and sweet potatoes.
Sprinkle sugar over all.
Cook, uncovered, over medium heat, stirring frequently, until potatoes are
tender and the sauce thickens. This takes about 30 minutes.
Note: For a special touch, transfer to a casserole/serving dish. Top with
marshmallows, and put under the broiler until the marshmallows melt and
brown slightly.
This is my husband's favorite way of fixing sweet potatoes. Now that the
kid is away at college, I cut this in half for the two of us, and there's
still a little left over for my lunch next day.
