INGREDIENTS

1 tb Olive oil
1/2 c Onions; chopped
1 Clove garlic; minced
4 6-ounce grouper fillets
1/2 c Dry white wine or vegetable stock
1 tb Parsley; chopped
1/2 ts Basil; or 2 tsp. fresh, chopped
1/2 ts Cayenne pepper
1/8 ts Hot red pepper sauce
1 c Tomatoes; peeled, seeded and chopped
1 Lemon; cut into wedges

INSTRUCTIONS

Prep: 5 min, Cook: 20 min.
Heat oil in a heavy nonstick skillet over medium heat. Saut. onions and
garlic 3-4 minutes or until onion softens. Add fish and saut. about 1
minute per side. Add remaining ingredients, except lemon. Season with salt
and pepper to taste. Cover and simmer 7-8 minutes or until fish flakes
easily. Serve fish with lemon wedges.
