Spicy Sausage and Vegetable Frittata

INGREDIENTS

8 oz Hot Italian Sausage; casings removed
1 md Zucchini; Diced
1 lg Red or green bell pepper; Diced
6 lg Eggs
1 c Shredded mozzarella cheese

INSTRUCTIONS

1. Crumble sausage into a 10-inch nonstick skillet. Cook over medium heat 2
to 3 minutes until no pink remains.
2. Add zucchini and bell pepper. Cook about 5 minutes, stirring often until
vegetables are tender.
3. Whisk eggs in a large bowl. Stir in cheese. Pour over mixture in skillet
and stir gently to distribute eggs evenly.
4. Cook 4 to 6 minutes until set on bottom and sides (eggs will be runny in
center).
5. If skillet handle is plastic or wood, wrap in foil to prevent scorching.
Broil fritatta 4 to 6 inches from heat source, 3 minutes or until firm in
center.
