INGREDIENTS

2 pk (10-ounce) washed and trimmed fresh spinach
3/4 c Thinly sliced purple onion, separated into rings
2/3 c Unsweetened orange juice
1 1/2 tb Chopped fresh cilantro
1/4 ts Salt
1/4 ts Pepper
1 tb Extra-virgin olive oil
1 Clove garlic, minced

INSTRUCTIONS

Directions: Combine spinach and onion rings in a large bowl. Combine orange
juice and next 5 ingredients in a jar; cover tightly, and shake vigorously.
Pour over salad, and toss gently.
