INSTRUCTIONS
1. Peel cucumbers and cut in half lengthwise. Scoop out seeds with a spoon;
then cut crosswise in 1/2-inch slices.
2. Arrange slices on a flat plate and sprinkle well with salt. Let stand 1
hour; then squeeze each slice gently to press out as much moisture as
possible.
3. Heat sesame oil. Add cucumbers and stir-fry until softened and
translucent (1 to 2 minutes).
4. Then stir in sugar and serve at once.
NOTE: Because of their semicircular shape, these are sometimes called
Cucumber Moon Slices.
