Sweet and Sour Cabbage With Plantains

INGREDIENTS

1/4 c Vegetable broth
2 tb Brown sugar; packed**
2 tb Cider vinegar
2 ts Cornstarch
1/4 ts Red pepper sauce
2 ts Vegetable oil
1 Ripe medium plantain; cut into 1/4" slices
1/3 c Green onions; sliced
1/4 c Red bell pepper; cut into 1 1/8" strips
4 c Savoy cabbage; coarsely shredded

**PERSONAL NOTE from Ursula Taylor - for diabetics - use brown sugar
substitute.
Mix broth, brown sugar, vinegar, cornstarch and pepper sauce; reserve. Heat
oil in 10" nonstick skillet over medium-high heat until hot. Add plantain,
onions and bell pepper; stir-fry one minute. Add cabbage; stir-fry 2
minutes. Stir in cornstarch mixture; cook and stir 10 seconds or until
thickened.
