We Love God!

God: "I looked for someone to take a stand for me, and stand in the gap" (Ezekiel 22:30)

Those who know God know that He is bound by his own promises and integrity, not by our wishes. Moreover, unlike us, God never finds himself in the uncomfortable situation of having made a promise He no longer wants to or is able to keep. God is never caught by surprise. God's promises are made in his infinite wisdom as part of His eternal plan and are backed by His matchless power. What God says, He does. God, because He is God, is a promise keeper.

We all admire and adore the baby Jesus born in the manger, but what we must mainly admire and adore is the Man on the cross – the fact that Jesus was born ultimately to die. He didn’t die because the Jews and Romans finally we able to put an end to this supposed troublemaker. He didn’t die because God wanted to show us an example of commitment to a cause or how to pay the definitive sacrifice or how to demonstrate humility or show love that is willing to suffer for friends. In a sense these are all true, but the ultimate reason Jesus died on the cross is because that was His primary mission to take away the sins of the world. 1 Peter 2:24, “He Himself bore our sins in His body on the cross.”

Tartiflette (Gratin of Potatoes with Washed Rind Cheese)

INGREDIENTS

6 oz Thick-sliced bacon, cut into lardons
6 oz Mushrooms, sliced
Salt and pepper
4 tb Softened butter
4 Potatoes, peeled and sliced 1/8-inch thick
1 1/2 c Crumbled washed rind cheese (such as, Pont L'Eveque, Limburger, Livarot or Muenster)
1 1/2 c Heavy cream

INSTRUCTIONS

Preheat oven to 325 degrees F. In a skillet saute bacon lardons until
lightly crisp and brown. Remove with a slotted spoon to paper towels to
drain. Discard all but 2 teaspoons bacon fat from skillet , reheat, add
mushrooms and saute until lightly brown; season with salt and pepper.
Generously butter a shallow baking dish with 2 tablespoons butter. Toss
potato slices with salt and pepper and arrange half in a layer in baking
dish. Sprinkle with bacon and mushrooms and top with h alf of cheese. Top
with a layer of remaining potatoes, and pour enough cream over top to
barely cover potatoes. Dot with remaining butter. Bake 30 minutes until
cream is completely absorbed and potat oes are tender. Remove baking dish
from oven, sprinkle with remaining cheese and continue to bake until cheese
is melted, browned and bubbly, 10 to 15 minutes more. Let sit a few moments
before servi ng.
