I forced myself into it by telling the pastor, who was lax and slow, after I had called four or five times and could not see him, that I had done my duty, and if he did not see me and interview me for church membership, I would call a church meeting myself and tell them I believed in Christ and ask them if they would have me.

Texas-Style Spanish Rice

INGREDIENTS

1/4 C Chopped green pepper 2 T Cooking oil 1 C Uncooked long grain rice 1/2
C Tomatoes with green chilies 1/4 t Ground turmeric 1 t Ground cumin 1/2 t
Salt 1/4 t Garlic powder 2 C Water 2-3 T Chopped fresh cilantro,optional
In a skillet, saute onion and green pepper in oil for about 2 minutes. Add
rice and stir until coated with oil. Add tomatoes, turmeric, cumin, salt,
garlic powder and water; bring to a boil. Reduce heat and simmer, covered,
about 20 minutes or until liquid is absorbed. Add cilantro if desired.
Yield: 6 servings.
