That is how the process of election always works. Those who remain outside God’s kingdom, who have not received His election and calling to become part of His people, do not lose something they sought to have but rather something they counted of no value. Noah does not have to fight to keep the masses out of the ark, as if it were the last lifeboat to leave a sinking ship. He does not have to stand by the gangplank with a shotgun, warding off the crowds. In fact, quite the reverse: only those whose hearts God has changed would want to take shelter within its confining walls.

Meekness is not to be confused with weakness: the meek are not simply submissive because they lack the resources to be anything else. Meekness is quite compatible with great strength and ability as humans measure strength, but whatever strength or weakness the meek person has is accompanied by humility and a genuine dependence on God. True meekness may be a quality of the strong, those who could assert themselves but choose not to do so.

INGREDIENTS

3 c Vegetable oil
20 Wonton skins; 1/4-inch strips
8 c Mixed salad greens; shredded
4 c Roast chicken; bite-size
1 c Bean sprouts; raw
1 lg Yellow pepper; strips, julienne
1/2 Cucumber; seedless, julienne
6 tb Lime juice;fresh
1/4 c Nuoc mam
1/4 c Brown sugar; pressed down
4 Serrano chiles; seeded, minced
1/2 ts Nutmeg; freshly grated
1 tb Lemon grass; finely minced
1 tb Fresh ginger; finely minced
1/4 c Fresh mint; finely minced
3 tb Fresh basil; finely minced
1/4 c Dry-roasted unsalted peanuts; coarsely chopped

INSTRUCTIONS

In a large skillet, heat the oil over moderately high heat until a strip of
won ton bounces across the surface. Add the won ton strips in batches and
fry, turning, until crisp and golden, about 1 minute. Transfer to paper
towels; drain well.
In a large bowl, combine the mixed greens, chicken, bean sprouts, yellow
pepper and cucumber.
In a medium bowl, whisk together the lime juice, fish sauce, brown sugar,
chiles, nutmeg, lemon grass, ginger, mint and basil. Add the dressing to
the salad and toss well. Gently fold in the crisp won ton strips. Turn out
onto a serving platter and sprinkle with the peanuts.
