Three-Bean and Tuna Salad

INGREDIENTS

15 oz Cannellini beans; rinsed and drained
15 oz Great northern beans; rinsed and drained
15 oz Kidney beans; rinsed and drained
1 lg Bell pepper; chopped
1 md Onion; chopped
1/4 c Fresh parsley; chopped
1/4 c Olive or vegetable oil
2 tb Lemon juice
2 tb Capers
1/4 ts Red pepper sauce
Lettuce leaves
6 1/8 oz Tuna in water; drained
Lemon wedges; if desired

INSTRUCTIONS

Mix beans, bell pepper, onion and parsley. Shake oil, lemon juice, capers
and pepper sauce in tightly covered container. Toss oil mixture and bean
mixture. Spoon onto lettuce. Top with tuna. Serve with lemon wedges.
