He created us 'in His image' so that we would image forth his glory in the world. We were made to be prisms refracting the light of God's glory into all of life. Why God should want to give us a share in shining with His glory is a great mystery. Call it grace or mercy or love – it is an unspeakable wonder. Once we were not. Then we existed – for the glory of God!

Thrill Ride of a Tuna Salad

INGREDIENTS

2 lb Tuna steaks; 1 inch thick
1 pk Mixed salad greens
6 tb Chopped fresh cilantro
4 tb Fresh lime juice
4 tb Tequila; or
Fresh orange juice
1 tb Minced jalapeno pepper; seeded
2 ts Minced garlic
1 1/2 ts Salt
pn Red pepper flakes; crushed
1 c Virgin olive oil
6 Servings BLACK BEAN RELISH; see recipe
6 Servings MANGO SALSA; see recipe

INSTRUCTIONS

SALAD
MARINADE
MARINADE - Combine cilantro, lime, tequilla, chili, garlic, salt and
crushed red pepper flakes in a small bowl.  Whisk until blended. Gradually
whisk in oil.
Set aside 1/2 cup for later.  Place tuna in glass baking dish and top
with remaining marinade.  Turn tuna to coat well. Refrigerate up to 2
hours. Grill or broil tun until just opaque in the center, about 4 minutes
per side.  Can serve from 4 to 8 appetites.
Lettuce Assortment:  romaine, red leaf lettuce, red and/or green cabbage,
spinach, etc. Toss with reserved 1/2 cup of marinade and chill. ________

NOTES : Not out of a can, this fresh tuna steak marinates in a spicy
citrus dressing up to 2 hours before grilling or broiling. Make
Black Bean Relish and Mango Salsa a day in advance or while the
tuna marinates. Note: instructions are minimal.
