Tofu Mayonnaise

INGREDIENTS

1	lb	Medium tofu, drained
1	tb	Cider vinegar
1	tb	Lemon juice
1	ts	Tamari (or soy sauce)
1	tb	Maple syrup (optional)

INSTRUCTIONS

1. Crumble tofu into a blender or food processor.
2. Add remaining ingredients.
3. Blend until smooth.
