Tomato, Corn, Basil and Pasta Salad (Hl)

INGREDIENTS

1 lb Pasta
1 Box frozen corn
2 Ripe tomatoes; chopped
1 sm Bunch basil; chopped fine -vinaigrette—
1 tb Mustard
1/4 c Olive oil
1/2 c Red wine vinegar
Salt and pepper; to taste

INSTRUCTIONS

Combine vinaigrette ingredients in a small jar and shake to mix.
In your hot pot, cook pasta until al dente and then add frozen corn. Strain
all in colander and let sit in sink.
In another bowl, combine chopped tomatoes, basil and vinaigrette. Pour the
mixture over the pasta and toss lightly. Can be served hot or cold.
Yield: 4 servings
