INGREDIENTS

1/2 c Celery; minced
1 tb Olive oil
4 Strips anchovies
1 c Seasoned bread crumbs
3 tb Romano cheese; grated
1/2 Tomato; minced
1 Trout filet

INSTRUCTIONS

Saut. minced celery in olive oil. Melt anchovies; add seasoned bread
crumbs. Simmer until almost dry. Add grated Romano cheese. This is the
Elmere dressing. Salt and pepper trout filet. Spread Elmere dressing on
trout; roll. Broil in lemon butter sauce, adding minced tomato.
