Turkey Skillet Ratatouille

INGREDIENTS

1 Eggplant; small/pared
1 Zucchini; small, diced
1 Onion; halved/thinly sliced
1 Garlic clove; minced
2 c Tomatoes; broken/w juice
Salt & pepper to taste
1 1/2 ts Oregano
3 c Turkey; roasted/cubed

INSTRUCTIONS

Spray skillet with cooking spray.  Combine all ingredients except turkey.
Cover and simmer 10 minutes, stirring frequently, until vegetables are
tender-crisp.  Stir in cubed turkey,  Cook and stir uncovered until nearly
all the liquid is evaporated and the turkey cubes are white (about 3 to 4
