We Love God!

One of the Old Testament names of God is El Shaddai, meaning “the All-Sufficient One.” It is a name rich with meaning. Those who worship Him in Spirit and in truth find Him adequate for every necessity of life. They do not need any supplementary experience, a stronger dose of His redemption, or any other spiritual or emotional accoutrements. God has given to every believer abundant grace that is utterly sufficient to fulfill our deepest longings, our most intense cravings, our most profound needs – every human requirement.

Christians claim to have the truth, and to follow Him who is the Truth (John 14:6). In our conversations, therefore, truth must be our watchword. How many of us stoop to telling stories with a reprehensible slant, either to make our point more emphatically or to present ourselves in a mere glamorous light than the raw facts will allow? How many of us say we will do things and instead renege on these responsibilities because it is personally inconvenient to go through with them? You who with me are teachers and preachers – how often do we fudge the evidence to make a point, or dogmatize in areas where we know nothing, in the hope that dogma will mask our ignorance? Ziti with Spicy Pesto Pantesco and Locatelli

INGREDIENTS

1/2 c Mint leaves,; picked over
1/2 c Basil leaves,; picked over
1 c Parsley,; picked over
2 Cloves garlic
2 tb Capers,; rinsed and drained
4 md Plum tomatoes,; roughly chopped
1 tb Black pepper
1 tb Crushed red pepper
1/2 c Extra virgin olive oil
Sea salt
1 lb Ziti pasta,; preferably Italian
1 c Freshly grated Locatelli Pecorino

INSTRUCTIONS

Bring 6 quarts water to boil and add 2 tablespoons salt.
In a blender, place mint, basil, parsley, garlic, capers, tomatoes, black
pepper, red pepper and half the olive oil. Process in short bursts until
roughly chopped. Turn blender on full and drizzle in remaining oil and
process until smooth, about 1 minute. Remove pesto and place in a large
serving bowl.
Cook pasta according to package instructions until just al dente and drain
well. Toss drained pasta in the serving bowl and toss like a salad to coat.
Sprinkle with grated Locatelli and serve.
Yield: 4 servings
