He always sends afflictions for our good; and knows by experience, what it is to suffer them. His kind hand will speedily put an end to all the pains we feel when we have derived from them all the good which He intends to do for us, by them.

Zucchini Egg Casserole

INGREDIENTS

2 tb Butter or margaine
1 Thinly sliced sweet onion
1 lb Zucchini
2 ts Seasoned salt
1/2 ts Seasoned pepper
6 Eggs
1 c Milk
6 oz Mozzarella cheese

INSTRUCTIONS

Melt butter in electric skillet at 350 degrees. Add onion adn saute about
10 minutes. Slice unpeeled zucchini into 1/2 inch slices. Add zucchini,
salt and pepper to onions, saute 6 minutes. Reduce heat to 220 degrees.
Beat eggs slightly. Add milk. Pour eggs over vegetable mixture. Bake about
15 minutes in skillet. Top with cheese slices. Bake about 5 more minutes or
until cheese melts. Serves 6.
