Chipotle Tomato Sauce

INGREDIENTS

1/2 c Chopped onions
1 tb Minced garlic
1/2 ts Whole oregano leaves
1/8 ts Ground cinnamon
2 tb Olive oil
2 1/2 c Fresh or canned chopped tomatoes; with juice
1/3 c Dry white wine
1/2 ts Minced chipotle chile in adobo
2 tb Chopped fresh cilantro

INSTRUCTIONS

Saute the onions, garlic, oregano and cinnamon in the olive oil over
moderate heat until soft. Add the tomatoes, wine and chipotle and cook
uncovered for 15 to 20 minutes until thickened. Stir in the cilantro.
This recipe yields about 3 cups of sauce.
