Lemon Bars

INGREDIENTS

1 1/4 c All-purpose flour; divided
1 c Sugar; divided
1/3 c Margarine; softened
1/2 c Egg Beaters Healthy Real Egg Substitute
2 ts Grated lemon peel
1/4 c Lemon juice
Powdered sugar; optional

INSTRUCTIONS

1.Mix 1 cup flour and 1/4 cup sugar in medium bowl. Cut in margarine until
mixture resembles coarse crumbs. Press mixture onto bottom of 9-inch square
baking pan.
2.Bake at 350¡F for 15 minutes or until golden brown.
3.Mix Egg Beaters, lemon peel, lemon juice, remaining flour and remaining
sugar; pour over prepared crust.
4.Bake for 15 minutes more until set. Cool slightly; sprinkle with powdered
sugar if desired. Cool completely in pan on wire rack. Cut into bars to
serve.
Nutrition Information per bar (without powdered sugar): 60 calories, 2 g
total fat, 0 g saturated fat, 0 mg cholesterol, 21 mg sodium.
