Moroccan Sweet Carrot Salad

INGREDIENTS

8 Carrots; peeled and shredded, up to 10
Raisins; if desired
1/3 c Honey
1/4 c Lemon juice
1 tb Orange flower water; (you can leave it out but it is what gives it a more Middle Eastern flavor)

INSTRUCTIONS

Dissolve honey in lemon juice, add carrots and raisins, mix well, sprinkle
with orange flower water and let sit one hour or longer before serving, I
make this for Shabbat a lot as it gets better the longer it "marinates".
