Peanut Sauce

INGREDIENTS

3/4 c Unsweetened coconut milk
4 ts Red curry paste
1 tb Sugar
1 tb Fish sauce
1/2 c Unsalted dry-roasted peanuts, ground

INSTRUCTIONS

Combine all ingredients in a small sauce pan. Bring to boiling, stirring
constantly. Reduce heat and simmer 1 minute, stirring constantly. Makes
about 1 cup.
